Over the weekend my best friend of over a decade came to Florida to spend her birthday with us. On Sunday we had her over for dinner with this ice cream cake for dessert. I found the recipe on this food website that I just conveniently can't find now. But I remember what I did so let's get into it.
INGREDIENTS
20 Oreos
1 tablespoon of milk
10 ice cream sandwiches
3 different ice cream flavors
1 8oz container of Cool Whip
1 8oz container of Cool Whip
METHOD
- In a food processor, blend 15 oreos with the tablespoon of milk and set it aside.
- Working quickly, cut the ice cream sandwiches in quarters and stack them lengthwise around a spring form pan.
- Add the processed oreos at the bottom of the pan, pressing it down firmly creating the base and then freeze for an hour.
- Remove your ice cream from the freezer and allow it to soften for 15 minutes.
- Transfer your first ice cream flavour into a small bowl and stir until smooth. Add that to the pan and then proceed with the other flavours. Transfer, smooth, layer.
- After you've done all three layers, add the cool whip to the top of the cake and make decorative swirls.
- Crush the remaining oreos and sprinkle them at the top of the cake.
- Freeze overnight and done.
This was super easy and a big hit with the adults and kids. I used strawberry, chocolate and vanilla but use whatever flavours you want or just use one. Whatever floats your boat.
