Jamaican Pumpkin Rice

Pumpkin rice is definitely one of the easiest ways to spice up your everyday white rice, side dish. It can be had on it's own or with whatever you're doing for dinner that night. I paired it with baked salmon. Something that I still need to make a post on, but that's for another day.




INGREDIENTS
2 cups Jasmine Rice
3 cups water
1/2 stick of butter
1/2 onion
1/2 pumpkin

METHOD
1. Add all ingredients except RICE to your pot (strain the soup mix so that no noodles get into the pot) 
2. When water comes to a boil add rice and reduce heat to medium
3. Stir with a FORK! If you use a spoon it will turn into a soup or porridge like consistency. 
4. When water reduces to just at the top of the rice, NOT DRIED OUT, reduce heat to low, stir/fluff with fork and then cover your pot.
5. Cook for 20-30 minutes.
6. Serve and enjoy.
