Jamaican Roast Beef

This is something I've now made a hand full of times, including for my Mum's surprise birthday dinner. It is a fave of Fred's and was actually requested by him last night. Depending on the size roast you choose, there may or not be left overs after dinner.




INGREDIENTS
Boneless Chuck Roast
Black Pepper
Paprika
All Purpose Seasoning
Soy Sauce
Scallions
Onions
Thyme
Scotch Bonnet Peppers
Browning
Fish & Meat Sauce
vegetable oil
brown sugar
baby carrots
baby potatoes

METHOD

  1. Wash and season your roast with all ingredients, except oil, sugar, carrots and potatoes. 
  2. After an hour, heat oil in dutch pot on high
  3. Brown both sides of your roast on high. 3 min per side.
  4. Add water to your pot using the bowl you seasoned the meat in. Enough water to just barely cover the meat. 
  5. Reduce heat to medium, cover your pot, and cook for 1 hour. 30 min per side. 
  6. Add carrots and potatoes and cook down for another 20-30 minutes. 
  7. Add brown sugar to sweeten the gravy. 
  8. Serve with rice and pease and/or mashed potatoes.
